The story behind the shop

A taste the owner never forgot.

As a high-school student, the owner bought pickles from an elderly woman selling them in Ibaraki's shopping street. Their flavor stayed with him and inspired him to make his own.

Years later, he discovered that the place where he had opened Nukatarou had once been her shop. That unexpected connection is part of why he continues to make these pickles with care.

Nukazuke is a traditional Japanese pickle made by fermenting vegetables in nukadoko, a bed of rice bran, salt, and other ingredients. It brings a tangy, savory flavor to the table.

From vegetables to nukazuke

Nukazuke is a traditional Japanese pickle. Vegetables are placed in nukadoko, a rice-bran bed seasoned with salt and other ingredients. At our shop, we carefully pickle each vegetable by hand.

Rinse briefly with water to remove the rice bran, cut into bite-size pieces, and enjoy with rice. Explore the different textures of seasonal vegetables.

Seasonal nukazuke and other foods are available at the shop. Selection may change with the season and preparation schedule.

We do not use any animal-derived ingredients in our nukadoko (rice-bran pickling bed). We also sell non-vegan items, including honey. Please message us on Instagram to ask which products are suitable for a vegan diet and to check their ingredients.

Make your own nukadoko

Learn about ingredients and daily care directly from the shop owner. Workshops take about one hour.

At the shop

Available for one person or a small group. Work with the ingredients and take home about 2 kg of prepared nukadoko.

Fee: ¥4,000

At your location

Workshops can also be arranged at a shop or community space. Contact us for details and availability.

For an in-shop workshop, bring a container of around 3 liters and something to write with. Please ask in advance if you need a container or would like to know what language the workshop is taught in.

What is nukazuke?

Nukazuke is a traditional Japanese pickle made by fermenting vegetables in a rice-bran bed called nukadoko.

Do you have vegan options?

We do not use any animal-derived ingredients in our nukadoko (rice-bran pickling bed). Not all products in our shop are vegan; we also sell items such as honey. Please message us on Instagram to check suitable products and their ingredients before ordering.

Can you deliver my order?

Yes, for orders from ¥2,000, plus shipping, within Japan. International shipping is not available. We ship after payment is confirmed. Follow our Instagram ordering steps below.

Can I order or ask questions by phone in English?

No. Please contact us through Instagram messages for English-language inquiries and orders.

Can one person join a workshop?

Yes, an in-shop workshop can be arranged for one person. Please message us to discuss availability and the language of instruction.

What should I bring to a workshop?

A container of around 3 liters and something to write with. Please ask if you do not have a suitable container.

Are all products always available?

No. Our selection changes with the season and preparation schedule. Please message us to ask about a specific item before visiting.

How to order

We accept orders and English-language inquiries through Instagram messages. English-language phone support is not available.

Delivery within Japan only. No international shipping. Orders for delivery start at ¥2,000, plus shipping.

    We will confirm availability, the total including shipping, and payment instructions with you in the message conversation.

  3. Pay, then we ship

    After the order details are agreed, make payment using the instructions provided. We ship your order once payment is confirmed.
